Underground Culinary is the offshoot where Underground Hospitality Advisors' advisory work meets the kitchen line — recipe R&D, plating research, and chef collaborations that don't fit inside the Discovery Assessment deliverable but have earned their own stage.
The work began as a private practice: kitchen-side testing of menu ideas, vendor walks, and small-format collaborations with chefs we trusted. It stayed out of the public view because the work wasn't ready, and the audience wasn't there. Both have caught up.
The framing has always been the same one the parent advisory is built on — the table you find should be the one worth finding. Underground Culinary is what that looks like when the kitchen is the seat of the table.
